Quando c'è mia cugina Vivi per i mezzi (quella vegetariana :D), non possiamo far altro che preparare piatti vegetariani appunto!!
Questo è molto semplice ma buonissimo, only downside is that every time my husband sborbotta because it took me a while 'bacon!
Et voila!
Ingredients:
500 gr. bucatini
1 eggplant
200 gr. button mushrooms
3 zucchini
tomato
200 gr. mozzarella
salt pepper
extra virgin olive oil
Procedure:
Cut the eggplants into chunks, mushrooms and courgettes and fry in plenty of extra virgin olive oil.
In a pan put a little oil and a clove of garlic, just let it cook and then add the tomato puree. After cooking, add the vegetables.
In a separate pan boil the pasta too al dente and drain.
Add the tomato sauce, mozzarella, cut into pieces and arrange in an ovenproof dish.
Put in oven at 180 degrees for 15 minutes.
